{"id":8252,"date":"2022-04-15T16:11:30","date_gmt":"2022-04-15T14:11:30","guid":{"rendered":"http:\/\/www.wp.cuisine-lucullus.com\/?p=8252"},"modified":"2022-04-15T16:11:31","modified_gmt":"2022-04-15T14:11:31","slug":"risotto-a-la-milanaise","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/15\/risotto-a-la-milanaise\/","title":{"rendered":"Risotto \u00e0 la milanaise"},"content":{"rendered":"\n<p>Serge El guido !<\/p>\n\n\n\n<p>Nombre de parts: 6<br>Temps de pr\u00e9paration: 10 minutes<br>Temps de cuisson: 30 minutes<\/p>\n\n\n\n<p><strong>Ingr\u00e9dients<\/strong>:<br>150 cl bouillon confectionn\u00e9 chez soi<br>1 petit oignon<br>50 g de moelle de b\u0153uf<br>60 g de beurre doux<br>375 g de riz Arborio<br>12 cl de vin rouge sec<br>1\/2 cuiller \u00e0 caf\u00e9 de safran en poudre<br>70 g de parmesan r\u00e2p\u00e9 tr\u00e8s frais<br>1 petite cuiller de beurre ramolli<br>Sel et poivre<\/p>\n\n\n\n<p><strong>Pr\u00e9paration<\/strong>:<br>R\u00e9chauffez lentement le bouillon \u00e0 feu doux.<\/p>\n\n\n\n<p>Pelez et \u00e9mincez finement l&#8217;oignon.<br>Faites blanchir la moelle pendant 3 minutes \u00e0 l&#8217;eau bouillante.<\/p>\n\n\n\n<p>Dans une marmite \u00e0 fond \u00e9pais, r\u00e9unissez l&#8217;oignon, le beurre et la moelle.<br>Faites cuire \u00e0 feu doux en m\u00e9langeant de temps en temps pendant 5 minutes jusqu&#8217;\u00e0 ce que l&#8217;oignon commence \u00e0 blondir.<\/p>\n\n\n\n<p>Ajoutez alors le riz et remuez.<br>Lorsque le riz a craqu\u00e9 ajoutez le vin rouge et laissez le riz l&#8217;absorber.<\/p>\n\n\n\n<p>Saupoudrez de safran et ajoutez alors une louche de bouillon.<br>Lorsque celui ci est absorb\u00e9 ajoutez une nouvelle louche de bouillon.<br>Continuez ainsi jusqu&#8217;\u00e0 ce que le riz soit cuit et le liquide compl\u00e9ment absorb\u00e9.<\/p>\n\n\n\n<p><strong>Dressage <\/strong>:<br>Juste avant de servir ajoutez le parmesan et m\u00e9langez.<\/p>\n\n\n\n<p>Breuvage:<br>Bourgueil (Val de Loire et Centre)<\/p>\n\n\n\n<p><strong>Notes<\/strong>:<br>Risotto alla milanese<br>Des morceaux de truffes blanches &#8211; on ne trouve celles-ci que pendant une br\u00e8ve p\u00e9riode de l&#8217;ann\u00e9e &#8211; sont parfois r\u00e2p\u00e9s pour accompagner du risotto au safran.<br>Ce suppl\u00e9ment d\u00e9licieux est cependant facultatif et son absence n&#8217;\u00f4te rien \u00e0 ce plat exquis, un des fleurons de la gastronomie milanaise.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Serge El guido !
