{"id":7966,"date":"2022-04-15T10:01:43","date_gmt":"2022-04-15T08:01:43","guid":{"rendered":"http:\/\/www.wp.cuisine-lucullus.com\/?p=7966"},"modified":"2022-04-15T10:01:43","modified_gmt":"2022-04-15T08:01:43","slug":"matelotes-de-soles-au-cidre","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/15\/matelotes-de-soles-au-cidre\/","title":{"rendered":"Matelotes de soles au cidre"},"content":{"rendered":"\n<p>R\u00e9dacteur Rina<\/p>\n\n\n\n<p>Nombre de parts: 4<br>Temps de pr\u00e9paration: 15 minutes<br>Temps de cuisson: 20 minutes<\/p>\n\n\n\n<p><strong>Ingr\u00e9dients<\/strong>:<br>4 \u00e9chalotes<br>1,2 kg de filets de soles<br>100 g de poitrine fum\u00e9e<br>1\/2 litre de cidre sec<br>250 g de champignons de Paris<br>2 jaunes d&#8217;\u0153ufs<br>80 g de beurre<br>3 cuiller\u00e9es \u00e0 soupe de cr\u00e8me fra\u00eeche<br>1\/2 verre \u00e0 liqueur de calvados<br>25 g de farine<br>cro\u00fbtons<br>laurier<br>sel, poivre<\/p>\n\n\n\n<p><strong>Pr\u00e9paration<\/strong>:<br>\u00c9pluchez les \u00e9chalotes.<br>Coupez-les en rondelles.<br>D\u00e9taillez la poitrine fum\u00e9e en petits d\u00e9s.<\/p>\n\n\n\n<p>Faites fondre 40 g de beurre dans une cocotte.<br>Mettez-y \u00e0 revenir les \u00e9chalotes et la poitrine fum\u00e9e.<br>Ajoutez la farine.<br>Remuez 2 \u00e0 3 minutes \u00e0 la cuiller en bois.<\/p>\n\n\n\n<p>Mouillez avec le calvados et le cidre.<br>Grattez le fond avec la cuiller en bois.<br>Salez, poivrez.<br>Ajoutez 1 feuille de laurier.<br>Laissez r\u00e9duire 15 minutes \u00e0 d\u00e9couvert.<\/p>\n\n\n\n<p>Lavez les champignons<br>S\u00e9chez-les et coupez-les en lamelles.<br>Faites-les revenir dans une po\u00eale avec une noisette de beurre 5 minutes environ.<br>Lorsque la sauce a r\u00e9duit, plongez-y les filets de soles.<\/p>\n\n\n\n<p>Ajoutez les champignons et laissez fr\u00e9mir 7 \u00e0 8 minutes sans bouillir.<br>Otez d\u00e9licatement le poisson.<br>Dressez-le sur un plat de service.<br>Gardez au chaud.<\/p>\n\n\n\n<p>Hors du feu, incorporez deux jaunes d&#8217;\u0153ufs \u00e0 la sauce et liez \u00e0 la cr\u00e8me fra\u00eeche.<\/p>\n\n\n\n<p><strong>Dressage<\/strong>:<br>Nappez les filets avec la sauce.
