Saler, poivrer<br>Flamber avec le cognac ou l&#8217;armagnac.  <br>R\u00e9server au chaud.D&#8217;autre part, casser les \u0153ufs dans un bol, assaisonner de sel et de poivre.<\/p>\n\n\n\n<p>Dans une po\u00eale bien chaude, mettre l&#8217;huile et y verser les \u0153ufs battus.<\/p>\n\n\n\n<p>A mi-cuisson de l&#8217;omelette, ajouter la pr\u00e9paration pr\u00e9c\u00e9dente<br>M\u00e9langer \u00e9nergiquement le tout. Finir de cuire.
