M\u00e9langez. Couvrez d&#8217;un linge.<br>Laissez reposer 12 heures dans un endroit frais mais pas froid.<\/p>\n\n\n\n<p>Dans un saladier versez le reste de la farine.<br>Ajoutez le sel,1 cuill\u00e8re \u00e0 soupe d&#8217;huile d&#8217;olive, le levain, 25 cl d&#8217;eau ti\u00e8de.<br>M\u00e9langez. Travaillez la p\u00e2te jusqu&#8217;\u00e0 ce qu&#8217;elle soit lisse et souple.<br>Ramassez en boule. Couvrez d&#8217;un linge humide.<br>Laissez lever 1 h 30 dans un endroit chaud.<\/p>\n\n\n\n<p>Sur le plan de travail farin\u00e9, p\u00e9trissez la p\u00e2te en y incorporant les olives concass\u00e9es.<br>\u00c9talez la p\u00e2te sous la forme d&#8217;un grand rectangle sur la plaque huil\u00e9 du four.<br>Incisez profond\u00e9ment la surface de la p\u00e2te \u00e0 l&#8217;aide d&#8217;un couteau.<br>Badigeonnez du reste d&#8217;huile d&#8217;olive. Couvrez d&#8217;un linge humide.<br>Laissez reposer 30 minutes dans un endroit chaud.<\/p>\n\n\n\n<p>Pr\u00e9chauffez le four \u00e0 240\u00b0 th 8. Enfournez.
