{"id":7310,"date":"2022-04-14T11:23:45","date_gmt":"2022-04-14T09:23:45","guid":{"rendered":"http:\/\/www.wp.cuisine-lucullus.com\/?p=7310"},"modified":"2022-04-14T11:23:46","modified_gmt":"2022-04-14T09:23:46","slug":"sauce-tomate","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/14\/sauce-tomate\/","title":{"rendered":"Sauce tomate"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">R\u00e9dacteur Jack<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nombre de parts : 2 bocaux<br>Temps de pr\u00e9paration: 20 minutes<br>Temps de cuisson: 2 heures<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingr\u00e9dients<\/strong>:<br>6 kilos de tomates<br>150 de lard de poitrine<br>200 g de carottes<br>150 g d&#8217;oignon<br>2 gousses d&#8217;ail<br>1 feuille de laurier<br>1 branche de thym<br>100 g de beurre<br>150 g de farine<br>2 litres de fonds blanc<br>20 g de sel<br>30 g de sucre<br>1 belle pinc\u00e9e de poivre<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pr\u00e9paration<\/strong>:<br>\u00c9queutez les tomates, coupez-les en 4 puis passez-les au mixer ou au moulin \u00e0 l\u00e9gumes.<br>Pelez et \u00e9crasez l&#8217;ail.<br>Pelez les carottes<br>Pelez les oignons.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Faites blanchir le lard de poitrine dans de l&#8217;eau bouillant pendant 1 minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Coupez le lard en lardons.<br>D\u00e9taillez les carottes et les oignons en mirepoix (d\u00e9s).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans une sauteuse, faites revenir les lardons avec un tout petit peu d&#8217;huile d&#8217;olive.<br>Ajoutez la mirepoix et faites revenir.<br>Saupoudrez de farine.<br>Faites cuire, en m\u00e9langeant, jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une couleur blonde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajoutez la pur\u00e9e de tomates, la feuille de laurier, le thym, le sucre, l&#8217;ail le sel et le poivre<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Portez \u00e0 \u00e9bullition tout en remuant.<br>Baissez le feu, couvrez et faites cuire doucement pendant 2 heures<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Passez la sauce \u00e0 l&#8217;\u00e9tamine pour en \u00f4ter les impuret\u00e9s.<br>Donnez une \u00e9bullition puis tamponner la surface avec un morceau de beurre.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Notes<\/strong>:<br>Voici une sauce d&#8217;une grande simplicit\u00e9 qui fait partie des grandes sauces de base.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tamponner: Il s&#8217;agit de passer sur la surface de la sauce un morceau de beurre piqu\u00e9 au bout d&#8217;une fourchette.<br>Cela \u00e9vite que la sauce se couvre d&#8217;une peau en refroidissant.<br>C&#8217;est vrai pour de nombreuses sauces.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>R\u00e9dacteur Jack Nombre de parts : 2 bocauxTemps de pr\u00e9paration: 20 minutesTemps de cuisson: 2 heures Ingr\u00e9dients:6 kilos de tomates150 de lard de poitrine200 g de carottes150 g d&#8217;oignon2 gousses d&#8217;ail1 feuille de laurier1 branche de thym100 g de beurre150 &hellip;
