{"id":7234,"date":"2022-04-14T10:57:18","date_gmt":"2022-04-14T08:57:18","guid":{"rendered":"http:\/\/www.wp.cuisine-lucullus.com\/?p=7234"},"modified":"2022-04-14T10:57:19","modified_gmt":"2022-04-14T08:57:19","slug":"sauce-charcutiere","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/14\/sauce-charcutiere\/","title":{"rendered":"Sauce charcuti\u00e8re"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">R\u00e9dacteur Jack<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nombre de parts: 50 cl<br>Temps de pr\u00e9paration: 10 minutes<br>Temps de cuisson: 10 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingr\u00e9dients<\/strong>:<br>20 cl de vin blanc sec<br>50 cl de fond de veau li\u00e9<br>50 g de cornichons<br>1 cuiller \u00e0 soupe d&#8217;huile<br>1 gros oignon d&#8217;environ<br>50 g de beurre<br>1 cuiller \u00e0 soupe de moutarde<br>Sel et poivre<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pr\u00e9paration<\/strong>:<br>Coupez les cornichons en rondelles et le beurre en petits cubes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pelez et hachez l&#8217;oignon.<br>Dans une casserole, faites le revenir, sans coloration avec un peu d&#8217;huile.<br>Mouillez de vin blanc et laissez r\u00e9duire pendant 3 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">D\u00e9layez le fonds de veau li\u00e9 et ajoutez 50 cl le dans la casserole.<br>Laissez r\u00e9duire encore 5 minutes.<br>Passez au chinois.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajoutez la moutarde et les cornichons puis m\u00e9langez avec une cuiller en bois ou un fouet.<br>Incorporez le beurre petit \u00e0 petit tout en m\u00e9langeant.<br>Salez et poivrez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">R\u00e9servez au chaud sans bouillir au risque de faire tourner la sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Notes <\/strong>:<br>Recette Auguste Escoffier.
