{"id":6927,"date":"2022-04-13T17:43:05","date_gmt":"2022-04-13T15:43:05","guid":{"rendered":"http:\/\/www.wp.cuisine-lucullus.com\/?p=6927"},"modified":"2022-04-13T17:43:06","modified_gmt":"2022-04-13T15:43:06","slug":"roti-de-veau-au-muscat-corse","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/13\/roti-de-veau-au-muscat-corse\/","title":{"rendered":"R\u00f4ti de veau au muscat corse"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">R\u00e9dacteur Eden<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nombre de personnes : 4<br>Temps de pr\u00e9paration : 30 minutes<br>Temps de cuisson : 1 h10 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingr\u00e9dients <\/strong>:<br>800 g de quasi de veau ou d&#8217;\u00e9paule<br>150 g de lard maigre<br>2 oignons<br>2 \u00e9chalotes<br>3 gousses d&#8217;ail<br>2 tomates<br>150 g de c\u00e9leri rave<br>4 brins de persil plat<br>1 petit brin de romarin<br>1 \u0153uf<br>25 cl de Muscat-du-cap-Corse<br>2 cuill\u00e8res \u00e0 soupe de chapelure<br>5 cuill\u00e8res \u00e0 soupe d&#8217;huile d&#8217;olive<br>Sel, poivre moulu<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pr\u00e9paration <\/strong>:<br>Pelez les oignons, les \u00e9chalotes et l&#8217;ail et hachez-les.<br>Rincez et essorez le persil et le romarin et ciselez-les finement.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pelez et \u00e9p\u00e9pinez les tomates, concassez la pulpe.<br>Pelez le c\u00e9leri rave, d\u00e9coupez-le en d\u00e9s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hachez le lard.<br>Chauffez une cuiller\u00e9e d&#8217;huile d&#8217;olive dans une casserole.<br>Ajoutez la moiti\u00e9 du hachis d&#8217;oignon, ail et \u00e9chalote.<br>Faites cuire 5 minutes sans laisser colorer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans un bol, m\u00e9langez ce hachis avec le lard, l&#8217;\u0153uf, les herbes et la chapelure.<br>Faites une entaille dans la viande, glissez dedans la farce au lard et ficelez-la pour lui donner la forme d&#8217;un r\u00f4ti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Faites flamber le muscat dans une petite casserole.<br>Dans une cocotte, faites chauffer l&#8217;huile restante et faites dorer le r\u00f4ti sur toutes ses faces.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajoutez le reste de hachis, les tomates et le c\u00e9leri, versez le muscat.<br>Salez et poivrez.<br>Couvrez et laissez mijoter 1 heure.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dressage <\/strong>:<br>Servir bien chaud accompagn\u00e9 de tagliatelles ou de pommes vapeur.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Breuvage <\/strong>:<br>Calvi blanc (Corse)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Notes <\/strong>:<br>Pr\u00e9par\u00e9e \u00e0 l&#8217;avance, cette recette est encore meilleure r\u00e9chauff\u00e9e.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>R\u00e9dacteur Eden Nombre de personnes : 4Temps de pr\u00e9paration : 30 minutesTemps de cuisson : 1 h10 minutes Ingr\u00e9dients :800 g de quasi de veau ou d&#8217;\u00e9paule150 g de lard maigre2 oignons2 \u00e9chalotes3 gousses d&#8217;ail2 tomates150 g de c\u00e9leri rave4 &hellip;
