{"id":6621,"date":"2022-04-13T09:17:17","date_gmt":"2022-04-13T07:17:17","guid":{"rendered":"http:\/\/www.wp.cuisine-lucullus.com\/?p=6621"},"modified":"2022-04-13T09:17:17","modified_gmt":"2022-04-13T07:17:17","slug":"terrine-de-porc-a-la-confiture-doignon","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/13\/terrine-de-porc-a-la-confiture-doignon\/","title":{"rendered":"Terrine de porc \u00e0 la confiture d&#8217;oignon"},"content":{"rendered":"\n<p>R\u00e9dacteur Jack<\/p>\n\n\n\n<p>Nombre de personnes: 10<br>Temps pr\u00e9paration : 1 heure<br>Temps cuisson : 2 heures<\/p>\n\n\n\n<p><strong>Ingr\u00e9dients <\/strong>:<br>1,250 kg \u00e9paule de porc, d\u00e9soss\u00e9e et coup\u00e9e en cubes<br>750 grammes de foie de porc frais coup\u00e9 en cubes<br>12 \u00e9chalotes grises<br>6 gousses d&#8217;ail<br>2 cuill\u00e8res \u00e0 soupe de thym<br>2 cuill\u00e8res \u00e0 soupe d&#8217;origan<br>2 cuill\u00e8res \u00e0 soupe de sauge<br>6 clous de girofle<br>1 cuill\u00e8res \u00e0 soupe de 4 \u00e9pices<br>1 grosse pointe de muscade r\u00e2p\u00e9e<br>1 grosse pointe de cannelle<br>3 cuill\u00e8res \u00e0 soupe de Porto<br>3 cuill\u00e8res \u00e0 soupe de Cognac<br>16 cl de vin blanc<br>12 tranches fines de bacon<br>Fleur de sel<br>Poivre noir en grains au moulin.<\/p>\n\n\n\n<p>Confiture d&#8217;oignons<br>12 oignons blancs<br>sucre semoule<br>25 cl de bi\u00e8re blonde<\/p>\n\n\n\n<p><strong>Pr\u00e9paration <\/strong>:<br>Pr\u00e9chauffez le four \u00e0 180 \u00b0C (th 6).<br>Mettez les cubes de viande dans un hachoir.<br>Hachez grossi\u00e8rement.<\/p>\n\n\n\n<p>\u00c9pluchez et \u00e9mincez l&#8217;ail et les \u00e9chalotes.<br>Ajoutez les \u00e9chalotes et l&#8217;ail.<\/p>\n\n\n\n<p>Ajoutez les au hachis.<br>Mixez l\u00e9g\u00e8rement.<br>Ajoutez le vin blanc, le porto, le cognac et les \u00e9pices.<br>M\u00e9langez.<\/p>\n\n\n\n<p>Tapisser un moule \u00e9troit avec les tranches de bacon.<br>Versez le hachis et pressez.<br>Recouvrez avec le bacon et enfoncez-le sur les bords \u00e0 l&#8217;aide d&#8217;un couteau.<\/p>\n\n\n\n<p>Enfournez au bain-marie.<\/p>\n\n\n\n<p>Laissez refroidir.<br>Couvrez \u00e0 hauteur de saindoux fondu.<br>Mettez 6 heures au r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<p>Pr\u00e9parez la confiture d&#8217;oignons:<br>Ciselez une douzaine d&#8217;oignons blancs.<br>Faites-les blondir dans du beurre.<br>Ajoutez imm\u00e9diatement \u00bd tasse de sucre semoule.<br>M\u00e9langez et baissez le feu.<\/p>\n\n\n\n<p>M\u00e9langez r\u00e9guli\u00e8rement en veillant \u00e0 ce que les oignons n&#8217;attachent pas.<br>Ajoutez 25 cl de bi\u00e8re blonde.<br>Laissez r\u00e9duire \u00e0 feu tr\u00e8s doux et faites cuire jusqu&#8217;\u00e0 consistance.<\/p>\n\n\n\n<p>R\u00e9frig\u00e9rez-les.<\/p>\n\n\n\n<p><strong>Dressage\u00a0<\/strong>:<br>R\u00e9chauffez-les l\u00e9g\u00e8rement au moment de servir.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>R\u00e9dacteur Jack Nombre de personnes: 10Temps pr\u00e9paration : 1 heureTemps cuisson : 2 heures Ingr\u00e9dients :1,250 kg \u00e9paule de porc, d\u00e9soss\u00e9e et coup\u00e9e en cubes750 grammes de foie de porc frais coup\u00e9 en cubes12 \u00e9chalotes grises6 gousses d&#8217;ail2 cuill\u00e8res \u00e0 &hellip;
