Au premier bouillon, baisser le feu.<\/p>\n\n\n\n<p>Cuire ensuite 2 h10 \u00e0 feu tr\u00e8s doux (puissance 4 sur 12) en remuant \u00e0 toutes les 5 ou 10 minutes.<br>Le volume du liquide diminue d&#8217;une bonne moiti\u00e9, voire 2\/3.<\/p>\n\n\n\n<p>Lorsque le m\u00e9lange \u00e9paissira et fonce l\u00e9g\u00e8rement vers le beige. Tourner plus fr\u00e9quemment.<br>Tourner sans arr\u00eat les 10 derni\u00e8res minutes.
