Essorez-les en les pressant entre vos mains.<br>Faites chauffer l\u2019eau de rose et mettez la g\u00e9latine \u00e0 fondre.<\/p>\n\n\n\n<p>Dans une casserole, portez 10 cl d\u2019eau \u00e0 \u00e9bullition avec le glucose et le sucre.<br>Faites bouillir jusqu\u2019\u00e0 ce que la temp\u00e9rature atteigne 130 \u00b0C (gros boulet); utilisez un thermom\u00e8tre de cuisine.<\/p>\n\n\n\n<p>Montez les blancs d\u2019\u0153ufs en neige.
