S\u00e9parez les bouquets et citronnez-les. Faites-les cuire 15 minutes \u00e0 l&#8217;eau bouillante sal\u00e9e ou \u00e0 la vapeur. \u00c9gouttez.<\/p>\n\n\n\n<p>Pelez le c\u00e9leri rave. Taillez-le en lamelles, citronnez-les, puis retaillez-les en b\u00e2tonnets.<br>Jetez le safran dans 1 L d&#8217;eau bouillante sal\u00e9e. Cuisez-y le c\u00e9leri rave 5 minutes. \u00c9gouttez.<\/p>\n\n\n\n<p>Pr\u00e9chauffez le four \u00e0 th. 7 (210\u00b0 C). R\u00e2pez le fromage.<\/p>\n\n\n\n<p>Beurrez un plat \u00e0 gratin, \u00e9parpillez-y le c\u00e9leri, puis les bouquets de chou-fleur.<\/p>\n\n\n\n<p>Dans une casseroles d\u00e9layez la Ma\u00efzena avec un peu de lait froid. Ajoutez le reste de lait et la cr\u00e8me.<br>Parfumez de noix de muscade r\u00e2p\u00e9e. Salez et poivrez.<\/p>\n\n\n\n<p>Portez \u00e0 \u00e9bullition en remuant sans cesse, \u00e9cartez du feu.<br>Versez sur les l\u00e9gumes.
