Rincez les rapidement \u00e0 l&#8217;eau vinaigr\u00e9e<br>Essuyez les sur du papier absorbant.<\/p>\n\n\n\n<p>Pelez et hachez les \u00e9chalotes finement ainsi que l&#8217;ail.<\/p>\n\n\n\n<p>Faites revenir les girolles rapidement \u00e0 feu moyen dans 20 g de beurre afin de les faire suer.<br>\u00c9gouttez les et d\u00e9barrassez. Faites fondre le reste de beurre dans la po\u00eale. Ajoutez les \u00e9chalotes.<br>D\u00e8s que le beurre mousse l\u00e9g\u00e8rement ajoutez alors les girolles. Maintenez \u00e0 feu vif sans couvrir.<br>En fin de cuisson ajoutez l&#8217;ail. Remuez r\u00e9guli\u00e8rement. Rectifiez l&#8217;assaisonnement.<\/p>\n\n\n\n<p><strong>Dressage :<\/strong><br>Versez la pr\u00e9paration dans un plat en terre<br>Parsemez de pluches de persil.
