Coupez les c\u00f4tes en tron\u00e7ons.<br>Faites les cuire 45 minutes \u00e0 d\u00e9couvert dans une casserole d&#8217;eau additionn\u00e9e du jus du citron et dans laquelle vous aurez d\u00e9lay\u00e9 la farine (blanc de cuisson).<\/p>\n\n\n\n<p>\u00c9gouttez les cardons tr\u00e8s soigneusement. R\u00e9servez les c\u00f4tes.<\/p>\n\n\n\n<p>Pr\u00e9chauffez le four \u00e0 210\u00b0C th-7.<\/p>\n\n\n\n<p>La sauce:<br>A commencer une vingtaine de minutes avant la fin de cuisson des cardons.<br>Faites un roux peu color\u00e9 avec 40 g de beurre et 40 g de farine.<\/p>\n\n\n\n<p>Mouillez le roux avec le jus de viande et le vin blanc. Remuez sans arr\u00eat.<br>R\u00e9duisez jusqu&#8217;\u00e0 ce que vous obteniez une consistance onctueuse.<br>Salez et poivrez.<\/p>\n\n\n\n<p>Beurrez un plat \u00e0 gratin. Versez y les cardons \u00e9goutt\u00e9s.
