Coupez les c\u00f4tes en morceaux. Jetez-les dans l&#8217;eau bouillante.<\/p>\n\n\n\n<p>Elles seront plus blanches si vous faites une cuisson au blanc c&#8217;est-\u00e0-dire si vous avez vers\u00e9 dans l&#8217;eau un peu de farine dilu\u00e9e dans du vinaigre. Au bout d&#8217;une heure environ elles doivent \u00eatre tendres et cuites.<\/p>\n\n\n\n<p>Pendant qu&#8217;elles cuisent faites un roux avec le beurre et la farine<br>Mouillez avec le bouillon de b\u0153uf (tout pr\u00e9par\u00e9 si vous n&#8217;en avez pas d&#8217;autre).<\/p>\n\n\n\n<p>Laissez mijoter et r\u00e9duire pendant 30 minutes.<\/p>\n\n\n\n<p>Coupez la moelle en grosses lamelles et pochez-la cinq minutes \u00e0 l&#8217;eau bouillante sal\u00e9e.<\/p>\n\n\n\n<p>Prenez un plat \u00e0 gratin. Dressez les cardes \u00e9goutt\u00e9es. Posez la moelle.
