Faites cuire le c\u00e9leri \u00e0 l&#8217;eau bouillante sal\u00e9e avec un jus de citron.<br>Mixez-le en pur\u00e9e fine. Passez-la au tamis fin pour en retirer le plus d&#8217;eau possible.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Comptez 200 \u00e0 250 grammes de pulpe de c\u00e9leri essor\u00e9e.<br>Assaisonnez selon vos pr\u00e9f\u00e9rences avec le sel de c\u00e9leri, le poivre, le piment et le cumin.<br>Ajoutez la cr\u00e8me fra\u00eeche bien froide. M\u00e9langez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Versez dans la cuve d&#8217;un siphon, fermez et injectez la cartouche de CO2.<br>Secouez et laissez au repos 20 minutes. Secouez \u00e0 nouveau et pressez.<br>Attention aux microparticules qui pourraient boucher le syst\u00e8me.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dressage:<\/strong><br>Garnissez des verrines, de petits bols ou des rondelles de pain pr\u00e9alablement grill\u00e9es.<br>Accompagne bien de la morue fra\u00eeche effeuill\u00e9e.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Note:<\/strong><br>Si vous ne disposez pas de tamis, mettez la pur\u00e9e dans un linge propre.<br>Formez une boule et serrez la en tortillant un bout pour en faire sortir l&#8217;eau.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si vous ne disposez pas de siphon, montez la cr\u00e8me en chantilly non sucr\u00e9e et incorporez la dans la pur\u00e9e de c\u00e9leri.
