{"id":5606,"date":"2022-04-11T13:26:34","date_gmt":"2022-04-11T11:26:34","guid":{"rendered":"https:\/\/www.wp.cuisine-lucullus.com\/?p=5606"},"modified":"2022-04-11T13:26:35","modified_gmt":"2022-04-11T11:26:35","slug":"bisque-de-langoustines","status":"publish","type":"post","link":"https:\/\/www.wp.cuisine-lucullus.com\/index.php\/2022\/04\/11\/bisque-de-langoustines\/","title":{"rendered":"Bisque de langoustines"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">R\u00e9dacteur gpepe<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cuisine all\u00e9g\u00e9e<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nombre de personnes : 4<br>Temps de pr\u00e9paration : 30 minutes<br>Temps de cuisson : 40 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingr\u00e9dients:<\/strong><br>1 kg de langoustines<br>2 carottes de 80 g chacune<br>1 oignon de 150 g<br>2 tomates de 100 g chacune<br>2 cuill\u00e8res \u00e0 soupe de concentr\u00e9 de tomate<br>400 g blancs de poireaux<br>1 gousse d&#8217;ail<br>1 bouquet garni (vert de poireau, persil, thym, laurier et estragon)<br>1 g de safran<br>poivre<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pr\u00e9paration:<\/strong><br>S\u00e9parer les queues des t\u00eates des langoustines.<br>Conservez les queues pour une autre utilisation.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">R\u00e9cup\u00e9rer le corail qui se trouve dans les t\u00eates et mettez-le au r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Epluchez et coupez les carottes et l&#8217;oignon en petits morceaux.<br>Mettez-les dans une casserole avec les t\u00eates de langoustines.<br>Faites chauffer sur feu doux 2 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajoutez les tomates (coup\u00e9es en 4), le concentr\u00e9 de tomates, l&#8217;ail hach\u00e9, le bouquet garni et couvrez avec 2 litres d&#8217;eau froide. Laissez cuire 35 minutes \u00e0 partir de l&#8217;\u00e9bullition, sur feu doux.<br>Ecumez d\u00e8s les premiers bouillons.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Epluchez et lavez les poireaux. Coupez-les en b\u00e2tonnets tr\u00e8s fins.<br>Faites-les cuire \u00e0 la vapeur 2 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au terme de la cuisson de la bisque, passez au mixeur (15 secondes) puis au chinois tr\u00e8s fin.<br>Salez et poivrez.
