R\u00e9servez.<\/p>\n\n\n\n<p>Pelez \u00e0 vif le pamplemousse en prenant soin d&#8217;\u00f4ter les peaux blanches afin d&#8217;obtenir des quartiers. R\u00e9cup\u00e9rez le jus qui a coul\u00e9.<\/p>\n\n\n\n<p>Faites cuire les langoustines 2 \u00e0 3 minutes dans de l&#8217;eau bouillante sal\u00e9e additionn\u00e9e d&#8217;un cube de court bouillon. Passez-les sous l&#8217;eau pour en stopper la cuisson et \u00e9gouttez-les.<br>D\u00e9cortiquez-les et r\u00e9servez.<\/p>\n\n\n\n<p>Pr\u00e9parez une vinaigrette selon vos go\u00fbts additionn\u00e9e du jus \u00e9coul\u00e9 du pamplemousse.<\/p>\n\n\n\n<p><strong>Dressage:<\/strong><br>Dressez les haricots verts au centre de chaque assiette.<br>Disposez dessus, en les alternant langoustines et quartiers de pamplemousse.<\/p>\n\n\n\n<p>Assaisonnez la pr\u00e9paration en versant la vinaigrette dessus.
