Coupez les oignons aux 3\/4 de leur hauteur<br>Creusez les centres en laissant les bases intactes. Hachez menu la pulpe d\u00e9tach\u00e9e, chapeau et centre.<\/p>\n\n\n\n<p>Dans une po\u00eale, faites \u00e9tuver 5 minutes au beurre, l&#8217;\u00e9chalote et oignon hach\u00e9s sur feu doux (ils ne doivent pas colorer). Ajoutez le veau, la mie de pain et le persil. Laissez cuire encore 5 minutes en \u00e9crasant le tout \u00e0 la cuill\u00e8re en bois. Hors du feu incorporez l&#8217;\u0153uf . Salez, poivrez . M\u00e9langez bien.<\/p>\n\n\n\n<p>Farcissez abondamment les oignons en tassant. Placez-les c\u00f4te \u00e0 c\u00f4te dans une cocotte.<br>Arrosez les de cidre . Parsemez de coriandre.
