Pelez et ciselez l&#8217;\u00e9chalote.<\/p>\n\n\n\n<p>Faites fondre l&#8217;\u00e9chalote dans une po\u00eale avec un peu d&#8217;huile. Arrosez de jus de citron. Laissez revenir 5 \u00e0 6 minutes. Salez et poivrez.<\/p>\n\n\n\n<p>Ramollissez la g\u00e9latine dans un peu d&#8217;eau froide. Faites chauffer 5 cl de cr\u00e8me dans une casserole.<br>Faites dissoudre la g\u00e9latine ramollie.<\/p>\n\n\n\n<p>Versez la g\u00e9latine dans un saladier. Incorporez la brousse par portion.<\/p>\n\n\n\n<p>Fouettez le reste de cr\u00e8me bien froide jusqu&#8217;\u00e0 ce qu&#8217;elle mousse.<br>Ajoutez-la \u00e0 la brousse.<\/p>\n\n\n\n<p>\u00c9crasez les crackers et incorporez-les ainsi que les champignons. \u00c9gouttez les girolles et ajoutez les \u00e0 la pr\u00e9paration.<\/p>\n\n\n\n<p>Tapissez un moule avec du film alimentaire. Versez la pr\u00e9paration dedans.
