D\u00e9tachez les pieds des chapeaux. Faites blanchir durant 2 min les chapeaux \u00e0 l&#8217;eau sal\u00e9e et citronn\u00e9e. Rincez-les, essuyez-les.<\/p>\n\n\n\n<p>S\u00e9chez les pieds. Hachez-les avec le jambon.<br>Ajoutez le fromage \u00e9cras\u00e9, persil, sel et poivre.<\/p>\n\n\n\n<p>Farcissez-en les chapeaux.
