Ajoutez les tomates en d\u00e9s et pel\u00e9es. Sel et poivre.<br>Laissez cuire 20 minutes.<\/p>\n\n\n\n<p>Pochez le saumon 10 minutes \u00e0 feu doux dans de l&#8217;eau bouillante.<br>\u00c9gouttez, mixez, salez, poivrez.<\/p>\n\n\n\n<p>Ramollissez la g\u00e9latine \u00e0 l&#8217;eau froide. Mettez en la moiti\u00e9 dans la concass\u00e9e.<br>Mettez l&#8217;autre moiti\u00e9 de g\u00e9latine ainsi que le jus de citron dans la pur\u00e9e de saumon chaude.<\/p>\n\n\n\n<p>Montez en chantilly la cr\u00e8me. Mettez en la moiti\u00e9 dans la pur\u00e9e de saumon refroidie et l&#8217;autre dans la concass\u00e9e refroidie.<\/p>\n\n\n\n<p>Tapissez un moule de film \u00e9tirable. \u00c9talez le saumon fum\u00e9 sur le fond et les bords en laissant d\u00e9passer.<\/p>\n\n\n\n<p>Versez la mousse de saumon. Mettez 15 minutes au frais. Couvrez de mousse de tomates.
