Nettoyez les champignons et \u00e9mincez les.<br>Faites les revenir dans 10 g de beurre jusqu&#8217;\u00e0 \u00e9vaporation de l&#8217;eau.<\/p>\n\n\n\n<p>Faites chauffez le lait. Salez et poivrez. Ajoutez une pointe de muscade.<br>Pr\u00e9parez la b\u00e9chamel en faisant un roux avec 50 g de beurre et 50 g de farine.<br>Lorsque celui ci est pr\u00eat ajoutez, hors feux le lait chaud. Remettez sur feux doux et m\u00e9langer jusqu&#8217;\u00e0 \u00e9paississement. Laissez ti\u00e9dir hors feux.<\/p>\n\n\n\n<p>S\u00e9parez les jaunes et les blancs des \u0153ufs.<br>Ajoutez 1 \u00e0 1 les jaunes dans la b\u00e9chamel.<br>Ajoutez le jambon. M\u00e9langez le tout.<\/p>\n\n\n\n<p>Battez les blancs en neige ferme. Incorporez les \u00e0 la b\u00e9chamel et au jambon.<br>Il faut \u00e9viter de casser les blancs.<\/p>\n\n\n\n<p>Beurrez fortement le moule \u00e0 souffl\u00e9. Remplissez le au 2\/3 de la pr\u00e9paration. Enfournez pendant 10 minutes.<br>Augmentez alors la temp\u00e9rature du four \u00e0 210\u00b0 C th 7.
