Dorer et cuire \u00e0 220 \u00b0C.<br>Ouvrir les feuillet\u00e9s en 2.<\/p>\n\n\n\n<p>\u00c9plucher les asperges et raccourcir les queues. Cuire dans de l&#8217;eau bouillante sal\u00e9e.<br>Refroidir vivement.<\/p>\n\n\n\n<p>Sauce hollandaise \u00e0 la fleur d&#8217;oranger : Faire clarifier le beurre en le mettant \u00e0 fondre dans un bain-marie.<br>Supprimer l&#8217;\u00e9cume et le petit lait.<\/p>\n\n\n\n<p>Dans un r\u00e9cipient \u00e9vas\u00e9, mettre les jaunes, un peu de jus de citron et 2 cl d&#8217;eau.<br>Monter progressivement la temp\u00e9rature en fouettant constamment<br>Le m\u00e9lange doit devenir mousseux et onctueux.<\/p>\n\n\n\n<p>Retirer le r\u00e9cipient quand la temp\u00e9rature atteint 60\u00b0C environ.<br>Incorporer alors hors du feu le beurre clarifi\u00e9 progressivement comme une mayonnaise.<br>Assaisonner et aromatiser avec la fleur d&#8217;oranger.<br>Stocker au chaud ( 45 \u00e0 50 \u00b0C).<\/p>\n\n\n\n<p><strong>Dressage:<\/strong><br>Au centre de l&#8217;assiette, d\u00e9poser le socle de feuilletage, les asperges et recouvrir avec le chapeau de feuilletage.
