Pelez les l\u00e9gumes. Hachez les.<br>Mettez le tout dans une grande casserole.<br>Ajoutez l&#8217;os de veau, la moiti\u00e9 du persil, le laurier. Salez.<br>Mouillez d&#8217;un litre d&#8217;eau froide.<\/p>\n\n\n\n<p>Laissez cuire doucement 1 heure minimum \u00e0 d\u00e9couvert. Passez le jus de veau au chinois.<\/p>\n\n\n\n<p>Dans une casserole faites fondre 20 g de beurre et 20 g de farine (faites un roux).<br>Ajoutez le jus de veau. Ajoutez le reste du persil. Laissez cuire 30 minutes environ.<br>Passez au chinois.<\/p>\n\n\n\n<p>Dans une sauteuse faites fondre doucement 50 g de beurre. Ajoutez les filets de sole.<br>Ajoutez le jus des 2 citrons et 5 cl de lait. Faites y cuire les filets de sole sans coloration pendant 5 \u00e0 6 minutes.<\/p>\n\n\n\n<p>Passez les filets au moulin \u00e0 l\u00e9gume. Ajoutez la cr\u00e8me fra\u00eeche et le velout\u00e9 (jus de veau + roux).<\/p>\n\n\n\n<p>Garnissez vos bouch\u00e9es.
