Laissez cuire 20 minutes.<br>Dans 50 g de beurre fondu faite revenir les \u00e9chalotes hach\u00e9es. Ajoutez les champignons et le thym.<br>Faire cuire jusqu&#8217;\u00e0 \u00e9vaporation du jus des champignons. R\u00e9servez au chaud.<\/p>\n\n\n\n<p>Dans une casserole; laissez fondre 250 g de beurre. Transvasez dans un bol \u00e0 bec verseur.<br>Mettez les jaunes d&#8217;\u0153ufs avec 1 cuill\u00e8re \u00e0 soupe d&#8217;eau dans la casserole.<br>Fouettez continuellement sur le feu tr\u00e8s doux jusqu&#8217;\u00e0 ce que les \u0153ufs deviennent mousseux.<\/p>\n\n\n\n<p>Hors du feu, incorporez le beurre fondu en continuant \u00e0 tourner. Ajouter le jus d&#8217;1 citron.<br>Salez et poivrez.<\/p>\n\n\n\n<p>Passez les artichauts sous l&#8217;eau froide. \u00c9gouttez-les t\u00eate en bas. \u00d4tez les rondelles de citron.<br>Arrachez soigneusement les feuilles du centre et le foin.<\/p>\n\n\n\n<p>Ajoutez aux champignons 1\/3 de la sauce.
