Laissez fondre le beurre dans une casserole, sur feu doux, sans le laisser colorer.<br>Ajoutez la farine, d\u00e9layez aussit\u00f4t jusqu&#8217;\u00e0 ce que le m\u00e9lange devienne homog\u00e8ne. Versez alors le lait.<br>Laissez cuire 10 minutes sur feu doux sans cesser de d\u00e9layer \u00e0 la cuill\u00e8re en bois ou au fouet \u00e0 sauce, jusqu&#8217;\u00e0 ce que la sauce \u00e9paississe.<\/p>\n\n\n\n<p>Salez, poivrez, r\u00e2pez un peu de noix de muscade.<br>Hors du feu, incorporez le fromage r\u00e2p\u00e9 et, \u00e9ventuellement le jaune d&#8217;\u0153uf et la cr\u00e8me fra\u00eeche.<\/p>\n\n\n\n<p>Pendant ce temps: \u00d4tez les tiges des feuilles d&#8217;\u00e9pinards, Faites fondre au beurre les feuilles d&#8217;\u00e9pinards<br>R\u00e9servez au chaud<\/p>\n\n\n\n<p>Grillez vos toasts. Coupez les en 4. Creusez l\u00e9g\u00e8rement le centre de ceux ci<\/p>\n\n\n\n<p>Ouvrez vos hu\u00eetres. D\u00e9cortiquez-les.  Pochez-les quelques instants dans leur eau.<\/p>\n\n\n\n<p><strong>Dressage\u00a0:<\/strong><br>Lorsque la sauce est pr\u00eate dressez vos canap\u00e9s: D\u00e9posez n peu d&#8217;\u00e9pinard sur chaque toast<br>Ajoutez 2 hu\u00eetres. Nappez de sauce Mornay.
