Dans une casserole \u00e0 fond \u00e9pais versez le vinaigre, le sel le sucre et le poivre concass\u00e9. Portez \u00e0 \u00e9bullition. Faites r\u00e9duire de moiti\u00e9 sur feu doux.<\/p>\n\n\n\n<p>Ajoutez le concentr\u00e9 de tomates d\u00e9lay\u00e9 de 3 cuill\u00e8res \u00e0 soupe d&#8217;eau. Pimentez \u00e0 votre convenance.<br>Poursuivez la cuisson 5 minutes \u00e0 feu doux.<\/p>\n\n\n\n<p>Montez au beurre hors feux. R\u00e9servez au chaud sur bain marie.<\/p>\n\n\n\n<p>Frottez d&#8217;ail le caquelon. Versez l&#8217;huile. Ajoutez thym et laurier. Chauffez \u00e0 feu moyen.<\/p>\n\n\n\n<p>Coupez l&#8217;\u00e9chine de porc. Tron\u00e7onnez les saucisses et chipolatas. Disposez le tout sur un plat de service.<br>Ajoutez les boudins antillais.
