Lavez les et essuyez les. Coupez les en gros tron\u00e7ons.<\/p>\n\n\n\n<p>Fendez puis lavez les poireaux. Egouttez les et taillez les en b\u00e2tonnets.<\/p>\n\n\n\n<p>Lavez le persil et pelez l&#8217;ail. Hachez les avec le laurier et le zeste d&#8217;orange.<\/p>\n\n\n\n<p>Pr\u00e9chauffez votre four \u00e0 200\u00b0 C (th6-7).<\/p>\n\n\n\n<p>Recouvrez le fond d&#8217;un plat \u00e0 gratin avec les poireaux coup\u00e9s. Parsemez dessus le hachis de persil et d&#8217;ail.<br>Repartissez les tron\u00e7ons d&#8217;anguilles. Salez et poivrez.<\/p>\n\n\n\n<p>R\u00e9partissez les olives noires.<br>Mouillez avec le vin blanc. Saupoudrez la moiti\u00e9 de la chapelure. Arrosez avec la moiti\u00e9 de l&#8217;huile d&#8217;olive.
