Faites-les cuire \u00e0 l&#8217;eau bouillante sal\u00e9e entre 15 \u00e0 20 minutes. Egouttez-les et \u00e9pluchez-les comme des pommes de terre.<br>R\u00e9servez-les au chaud.<\/p>\n\n\n\n<p>Rincez les morceaux de raie \u00e0 l&#8217;eau courante. Placez-les dans un faitout. Saupoudrez-les de court bouillon en sachet. Mouillez jusqu&#8217;\u00e0 les recouvrir et portez doucement \u00e0 \u00e9bullition. Baissez le feu et laissez fr\u00e9mir 6 \u00e0 7 minutes.<\/p>\n\n\n\n<p>Pendant ce temps pr\u00e9parez la vinaigrette et incorporez-y les c\u00e2pres. Lavez et essorez la salade.<\/p>\n\n\n\n<p>Dressage:<br>Egouttez les morceaux de raie et \u00f4tez en la peau.<br>Dressez-les sur assiette chaude entour\u00e9s de topinambours coup\u00e9s en rondelles.
